or PANCAKE DAY!

When we forget about calories and choose to overindulge!!

But wait! Pancakes can be healthy and they can also be a better option than sugary breakfast cereals often opted for in the mornings.

I love this recipe as you secretly hide a portion of vegetables without anyone noticing (apart from the colour!) – but if you have children you can make it fun for them by telling them they are Shrek’s favourite breakfast!! They had better eat them up quickly before Donkey and the Gingerbread man comes looking for a taste 🙂

Serves 1 person

40g oats

8 tablespoons unsweetened almond milk

1 beaten egg

handful of spinach

If you like a sweeter pancake, add an apple

Blend all the ingredients together – a Nutribullet will make it smoother but you can do it with a hand blender),

Melt a little coconut oil in a frying pan or skillet

Place a spoonful onto the pan and cook until browned before flipping to cook the other side (about 1 minute)

Serve with topping of your choice
